Ingredients:

  • 2 slices (60g) whole grain bread
  • 1 large (50g) egg
  • 1 tsp (5ml) extra virgin olive oil
  • 1 slice (20g) sharp cheddar cheese
  • 2 slices (30g) tomato
  • 1/2 cup (15g) baby arugula
  • 1 tbsp (15g) light mayonnaise
  • 1 pinch (1g) sea salt and black pepper

Instructions:

  1. Slice the tomato thinly and wash the arugula. Toast the bread until golden brown and spread the light mayonnaise evenly across both toasted slices.
  2. Heat the olive oil in a non-stick skillet over medium-high heat until it shimmers. Crack the egg gently into the center and cook undisturbed for about 2 minutes until the edges are crispy.
  3. Carefully flip the egg and immediately place the slice of cheddar cheese on top. Cover the pan with a lid for 30–60 seconds to melt the cheese.
  4. Place the arugula on the bottom slice of toast, top with tomato slices, and slide the cheesy fried egg onto the tomatoes. Close the sandwich with the second slice of toast and press gently.
