Ingredients:
- 1.5 lb heirloom tomatoes
- 2 large ripe peaches
- 8 oz burrata cheese (2 balls)
- 3 tbsp extra virgin olive oil
- 1 tbsp white balsamic vinegar
- 1 tsp raw honey
- 0.5 cup fresh basil
- 0.25 tsp flaky sea salt
- 0.125 tsp cracked black pepper
Instructions:
- Slice the heirloom tomatoes into 1/2-inch thick rounds or wedges. Cut the 2 large ripe peaches into similar sized wedges.
- In a small glass jar or bowl, whisk together the extra virgin olive oil, white balsamic vinegar, and raw honey until the dressing is fully emulsified.
- Arrange the tomato and peach slices on a large shallow platter, alternating and overlapping them to create a vibrant base.
- Place the room-temperature burrata balls in the center of the platter. Use a knife to gently tear the outer skin of the cheese to expose the creamy interior.
- Drizzle the vinaigrette evenly over the salad. Garnish with hand-torn fresh basil leaves, flaky sea salt, and freshly cracked black pepper. Serve immediately.
