Ingredients:
- 450g English cucumber, thinly sliced
- 15g red onion, thinly slivered
- 8g fresh cilantro, chopped
- 5g toasted sesame seeds
- 3g kosher salt (for sweating the cucumbers)
- 45ml rice vinegar
- 30ml soy sauce
- 15ml toasted sesame oil
- 15ml honey
- 5g fresh ginger, finely grated
- 3g garlic, minced
- 2g red pepper flakes (optional for heat)
Instructions:
- Slice the cucumbers into thin rounds. Toss them in a bowl with the kosher salt and let them sit for 5-10 minutes. Pour them into a colander and pat dry with a paper towel.
- In a small bowl, combine the rice vinegar, soy sauce, sesame oil, honey, grated ginger, and garlic (and optional red pepper flakes). Whisk vigorously until the honey is fully dissolved and the dressing looks velvety and unified.
- Place the drained cucumbers and slivered red onion in a large bowl. Pour the dressing over the top. Gently fold in the cilantro and sesame seeds. Toss until every slice is glistening.
