Ingredients:
- 1 ¼ cups (160g) all-purpose flour
- ½ cup (115g) cold unsalted butter, cubed
- ½ tsp (3g) salt
- 4 tbsp (60ml) ice-cold water
- 2 cups (450g) cooked, peeled sweet potato puree
- ½ cup (115g) unsalted butter, melted
- ¾ cup (150g) packed light brown sugar
- 3 large eggs
- 1 tsp (5ml) vanilla extract
- 1 tsp (2g) ground cinnamon
- ½ tsp (1g) ground nutmeg
- ¼ tsp (1g) salt
- 1 cup (110g) raw pecan halves
Instructions:
- Pulse flour and salt in a processor. Add cold butter and pulse until the mixture resembles coarse crumbs.
- Slowly add ice water one tablespoon at a time until the dough just holds together.
- Press the dough into a 9-inch pie plate, trimming the edges, and refrigerate for 15 minutes to prevent shrinkage.
- Place the cooked sweet potatoes, melted butter, brown sugar, eggs, vanilla, and spices into a blender.
- Blend on high until the mixture is completely smooth and glossy.
- Pour the puree into a bowl and gently stir in the pecan halves by hand.
- Pour the filling into the chilled crust and smooth the top with a spatula.
- Bake at 400°F (200°C) for 12 minutes to lock in the crust.
- Reduce heat to 350°F (175°C) and bake for another 45-50 minutes until the custard is set.
