Ingredients:

  • 1 box (15.25 oz) Strawberry Cake Mix
  • 4 oz cream cheese, softened
  • 0.5 cup unsalted butter, softened
  • 1 large egg, room temperature
  • 1 tsp pure vanilla extract
  • 0.5 cup granulated sugar
  • 24 Hershey's Kisses

Instructions:

  1. In a large bowl using an electric mixer, cream together the softened butter and cream cheese until light and fluffy. Note: This should take about 2 minutes to properly aerate the fats.
  2. Beat in the egg and vanilla extract until fully combined.
  3. Gradually add the strawberry cake mix to the wet ingredients. Mix on low speed until no dry streaks remain and a thick, tacky dough forms.
  4. Preheat oven to 350°F (175°C). Scoop rounded tablespoons of dough and roll into 1 inch balls.
  5. Roll each ball in the granulated sugar until evenly coated and shimmering.
  6. Place cookie balls 2 inches apart on parchment lined baking sheets.
  7. Bake for 10 minutes until the edges are set but the centers remain soft.
  8. Remove from oven and let cool on the pan for 2-3 minutes.
  9. While still warm, gently press one unwrapped Hershey's Kiss into the center of each cookie until the dough cracks slightly around the edges.
  10. Transfer to a wire rack to cool completely.
