Ingredients:
- 2 cups (475g) pumpkin puree
- 1 tbsp (15g) olive oil
- 1 medium (110g) yellow onion, finely diced
- 3 cloves (9g) garlic, minced
- 1 tsp (1g) dried sage
- ½ tsp (3g) salt
- ¼ tsp (1g) black pepper
- 3 tbsp (42g) unsalted butter
- 3 tbsp (25g) all-purpose flour
- 2 cups (480ml) skim milk
- ¼ tsp (0.5g) ground nutmeg
- ½ tsp (3g) salt
- 9 to 12 (approx. 250g) oven-ready lasagna noodles
- 15 oz (425g) part-skim ricotta cheese
- 1 egg (50g), lightly beaten
- 10 oz (280g) fresh baby spinach, wilted and squeezed dry
- 2 cups (225g) shredded part-skim mozzarella
- ½ cup (50g) grated Parmesan cheese
Instructions:
- Heat olive oil in a skillet over medium heat. Sauté diced onion until translucent (about 5 minutes). Stir in minced garlic and dried sage, cooking for 60 seconds.
- Stir in the pumpkin puree, salt, and pepper. Simmer on low for 10 minutes to reduce moisture until the mixture is thick.
- In a medium saucepan, melt butter over medium-low heat. Whisk in flour to create a roux and cook for 2 minutes without browning.
- Slowly pour in skim milk while whisking constantly. Cook until the sauce thickens enough to coat the back of a spoon, then stir in nutmeg and salt.
- In a mixing bowl, combine the ricotta cheese, lightly beaten egg, and wilted, squeezed-dry spinach.
- In a 9x13 inch baking dish, spread a thin layer of white sauce. Layer noodles, pumpkin base, ricotta-spinach mixture, and mozzarella cheese. Repeat layers until all ingredients are used.
- Top the final layer of noodles with the remaining white sauce, mozzarella, and grated Parmesan cheese.
- Bake at 375°F (190°C) for 45 minutes until the top is golden brown and bubbling.
