Ingredients:

  • 1 cup (100g) dried black elderberries (Sambucus nigra)
  • 3 cups (710ml) filtered water
  • 2 tbsp fresh ginger, grated
  • 1 cinnamon stick, crushed
  • 0.5 tsp whole cloves
  • 1 cup (340g) raw honey

Instructions:

  1. Place the dried elderberries, water, ginger, cinnamon, and cloves into a medium saucepan.
  2. Bring the mixture to a rolling boil, then immediately reduce the heat to low.
  3. Simmer uncovered for 45 minutes until the liquid has reduced by half.
  4. Use the back of a large spoon or a potato masher to gently press the berries against the side of the pot.
  5. Remove from heat and let it sit for about 10 minutes to cool slightly.
  6. Pour the liquid through a fine mesh strainer lined with cheesecloth into a glass bowl.
  7. Once cool enough to touch, gather the corners of the cheesecloth and squeeze the berries until every drop of dark juice is extracted.
  8. Let the concentrated juice cool down to lukewarm (about 100°F).
  9. Add the raw honey and whisk steadily until the mixture is smooth and glossy.
  10. Pour your finished syrup into a clean glass jar and cap it tightly.
