Ingredients:

  • 3 lbs sweet potatoes, peeled and cubed

  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. Peel the sweet potatoes and cut them into uniform 1-inch (2.5cm) cubes to ensure even cooking.
  3. In an extra-large mixing bowl, combine the cubed potatoes, olive oil, salt, pepper, garlic powder, paprika, and thyme.
  4. Toss the ingredients gently but thoroughly until every potato surface is glistening with oil and seasoning.
  5. Spread the potatoes across the prepared baking sheet in a single layer, ensuring no two cubes are touching to prevent steaming.
  6. Roast for 30–35 minutes, flipping the cubes once halfway through with a spatula, until the exterior is mahogany-colored and the centers are tender when pierced with a fork.
