Ingredients:

  • 1 cup (227g) pumpkin puree
  • 1 cup (225g) overripe bananas, mashed
  • 1/2 cup (113g) unsalted butter, melted and cooled
  • 2 large eggs, room temperature
  • 1 tsp pure vanilla extract
  • 2 cups (250g) all-purpose flour
  • 3/4 cup (150g) light brown sugar, packed
  • 1/4 cup (50g) granulated white sugar
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp fine sea salt
  • 2 tsp ground cinnamon
  • 1 tsp pumpkin pie spice

Instructions:

  1. Preheat your oven to 325°F (165°C) and grease a 9x5 inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, combine the mashed bananas, pumpkin puree, melted butter, brown sugar, white sugar, eggs, and vanilla extract.
  3. Whisk the wet ingredients vigorously until the mixture is glossy and fully emulsified.
  4. Gently fold in the all-purpose flour, baking soda, baking powder, salt, cinnamon, and pumpkin pie spice using a spatula until just combined.
  5. Pour the batter into the prepared loaf pan and bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack.
