Ingredients:
- 1 cup (227g) pumpkin puree
- 1 cup (225g) overripe bananas, mashed
- 1/2 cup (113g) unsalted butter, melted and cooled
- 2 large eggs, room temperature
- 1 tsp pure vanilla extract
- 2 cups (250g) all-purpose flour
- 3/4 cup (150g) light brown sugar, packed
- 1/4 cup (50g) granulated white sugar
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp fine sea salt
- 2 tsp ground cinnamon
- 1 tsp pumpkin pie spice
Instructions:
- Preheat your oven to 325°F (165°C) and grease a 9x5 inch loaf pan or line it with parchment paper.
- In a large mixing bowl, combine the mashed bananas, pumpkin puree, melted butter, brown sugar, white sugar, eggs, and vanilla extract.
- Whisk the wet ingredients vigorously until the mixture is glossy and fully emulsified.
- Gently fold in the all-purpose flour, baking soda, baking powder, salt, cinnamon, and pumpkin pie spice using a spatula until just combined.
- Pour the batter into the prepared loaf pan and bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack.
