Ingredients:

  • 1/2 cup (40g) old-fashioned rolled oats
  • 1 cup (240ml) unsweetened almond milk
  • 1/4 tsp (1g) sea salt
  • 1/2 cup (120ml) liquid egg whites
  • 1 tbsp (10g) chia seeds
  • 1 tbsp (16g) natural peanut butter
  • 1 tsp (5ml) pure vanilla extract
  • 1 tbsp (15ml) pure maple syrup
  • 1/2 tsp (1g) ground cinnamon

Instructions:

  1. Combine the rolled oats, almond milk, and salt in a small saucepan over medium heat. Bring to a gentle simmer, stirring occasionally, and cook for 5–7 minutes until the oats have absorbed most of the liquid but still look slightly wet.
  2. Turn the heat down to low. Slowly whisk in the liquid egg whites and chia seeds, stirring vigorously for 2 minutes until the oats transform into a light, fluffy, and voluminous texture.
  3. Remove the pan from the heat. Stir in the vanilla extract, maple syrup, and cinnamon, allowing the residual heat to incorporate the flavors.
