Ingredients:
- 1/2 cup (40g) old-fashioned rolled oats
- 1 cup (240ml) unsweetened almond milk
- 1/4 tsp (1g) sea salt
- 1/2 cup (120ml) liquid egg whites
- 1 tbsp (10g) chia seeds
- 1 tbsp (16g) natural peanut butter
- 1 tsp (5ml) pure vanilla extract
- 1 tbsp (15ml) pure maple syrup
- 1/2 tsp (1g) ground cinnamon
Instructions:
- Combine the rolled oats, almond milk, and salt in a small saucepan over medium heat. Bring to a gentle simmer, stirring occasionally, and cook for 5–7 minutes until the oats have absorbed most of the liquid but still look slightly wet.
- Turn the heat down to low. Slowly whisk in the liquid egg whites and chia seeds, stirring vigorously for 2 minutes until the oats transform into a light, fluffy, and voluminous texture.
- Remove the pan from the heat. Stir in the vanilla extract, maple syrup, and cinnamon, allowing the residual heat to incorporate the flavors.
