Ingredients:

  • 1 1/2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1 cup milk
  • 1 large egg
  • 3 tbsp unsalted butter, melted and cooled
  • 1 tsp vanilla extract
  • 1/2 cup mini chocolate chips or fresh blueberries

Instructions:

  1. Preheat your oven to 375°F (190°C) and generously grease a mini muffin tin with non-stick spray.
  2. In a mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
  3. In a separate bowl, beat the egg, then stir in the milk, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients. Stir with a spatula until just combined; stop the moment no streaks of flour remain, leaving the batter slightly lumpy.
  5. Divide the batter evenly among the 24 mini muffin cups, filling each about 3/4 full. Press mini chocolate chips or fresh blueberries into the top of each bite.
  6. Bake for 10–12 minutes until the tops spring back when lightly touched and the edges are pale gold.
