Ingredients:
- 1 1/2 cups all-purpose flour
- 2 tbsp granulated sugar
- 1 tbsp baking powder
- 1/4 tsp salt
- 1 cup milk
- 1 large egg
- 3 tbsp unsalted butter, melted and cooled
- 1 tsp vanilla extract
- 1/2 cup mini chocolate chips or fresh blueberries
Instructions:
- Preheat your oven to 375°F (190°C) and generously grease a mini muffin tin with non-stick spray.
- In a mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
- In a separate bowl, beat the egg, then stir in the milk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients. Stir with a spatula until just combined; stop the moment no streaks of flour remain, leaving the batter slightly lumpy.
- Divide the batter evenly among the 24 mini muffin cups, filling each about 3/4 full. Press mini chocolate chips or fresh blueberries into the top of each bite.
- Bake for 10–12 minutes until the tops spring back when lightly touched and the edges are pale gold.
