Ingredients:

  • 1 lb (450g) boneless skinless chicken breast, cubed into 1-inch pieces
  • 2 tbsp (30ml) olive oil
  • 1 medium (150g) yellow onion, diced
  • 3 cloves (15g) garlic, minced
  • 3 medium (600g) zucchini, sliced into 1/2-inch rounds
  • 1 tsp (5g) dried Italian seasoning
  • ½ tsp (3g) salt
  • ¼ tsp (1g) black pepper
  • 1 ½ cups (170g) shredded mozzarella cheese
  • ½ cup (50g) grated Parmesan cheese
  • ¼ cup (15g) fresh parsley, chopped

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Heat the olive oil in an oven-safe skillet over medium-high heat.
  3. Add the cubed chicken and sear until the edges are golden-brown (about 5–7 minutes).
  4. Stir in the diced onion and garlic, sautéing for another 3 minutes until the onion becomes translucent and smells fragrant.
  5. Remove the skillet from heat (or transfer the mixture to a baking dish if using a separate pan).
  6. Arrange the zucchini slices in an even layer over the chicken mixture.
  7. Sprinkle the Italian seasoning, salt, and pepper evenly across the zucchini.
  8. Cover the top with a generous layer of mozzarella and Parmesan cheese.
  9. Place the pan in the center rack of the oven and bake for 20–25 minutes, or until the zucchini is tender.
  10. Garnish with chopped fresh parsley before serving.
