Ingredients:
- 1 lb (450g) boneless skinless chicken breast, cubed into 1-inch pieces
- 2 tbsp (30ml) olive oil
- 1 medium (150g) yellow onion, diced
- 3 cloves (15g) garlic, minced
- 3 medium (600g) zucchini, sliced into 1/2-inch rounds
- 1 tsp (5g) dried Italian seasoning
- ½ tsp (3g) salt
- ¼ tsp (1g) black pepper
- 1 ½ cups (170g) shredded mozzarella cheese
- ½ cup (50g) grated Parmesan cheese
- ¼ cup (15g) fresh parsley, chopped
Instructions:
- Preheat your oven to 400°F (200°C).
- Heat the olive oil in an oven-safe skillet over medium-high heat.
- Add the cubed chicken and sear until the edges are golden-brown (about 5–7 minutes).
- Stir in the diced onion and garlic, sautéing for another 3 minutes until the onion becomes translucent and smells fragrant.
- Remove the skillet from heat (or transfer the mixture to a baking dish if using a separate pan).
- Arrange the zucchini slices in an even layer over the chicken mixture.
- Sprinkle the Italian seasoning, salt, and pepper evenly across the zucchini.
- Cover the top with a generous layer of mozzarella and Parmesan cheese.
- Place the pan in the center rack of the oven and bake for 20–25 minutes, or until the zucchini is tender.
- Garnish with chopped fresh parsley before serving.
