Ingredients:
- Large Shrimp (16/20 count), peeled and deveined, tail-on
- Old Bay Seasoning
- Smoked Paprika
- Freshly cracked black pepper
- Unsalted Butter
- Garlic, minced
- Extra Virgin Olive Oil
- Fresh Lemon, juiced
- Fresh Parsley, finely chopped
Instructions:
- Pat the shrimp completely dry with paper towels to ensure a proper sear. In a medium bowl, toss the shrimp with Old Bay seasoning, smoked paprika, and black pepper until evenly coated.
- Heat the olive oil in a 12-inch cast iron or stainless steel skillet over medium-high heat until shimmering. Arrange shrimp in a single layer, working in batches if necessary.
- Sear the shrimp for 2 minutes per side until the edges are opaque and a dark crust forms. Reduce heat to medium.
- Add the unsalted butter and minced garlic to the center of the pan. As the butter foams, use a spoon to baste the shrimp with the garlic butter for 1-2 minutes.
- Remove the skillet from heat once shrimp are curled into a 'C' shape. Squeeze fresh lemon juice over the pan and garnish with chopped parsley before serving.
