Ingredients:

  • 3 large ripe bananas, mashed (340g)
  • 1/2 cup (115g) unsalted butter, melted and cooled
  • 3/4 cup (150g) brown sugar, packed
  • 1 large egg, room temperature
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1 tsp (2g) ground cinnamon
  • 3/4 cup (85g) walnuts, chopped
  • 1 tbsp (8g) all-purpose flour

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line the bottom with parchment paper.
  2. In a large bowl, mash the bananas until smooth. Whisk in the melted butter, brown sugar, egg, and vanilla until the mixture is velvety and cohesive.
  3. In a separate medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
  4. Gently fold the dry ingredients into the wet banana mixture using a rubber spatula until just combined; do not overmix.
  5. Toss the chopped walnuts in 1 tablespoon of flour, then fold them gently into the batter.
  6. Pour the batter into the prepared pan, smoothing the top with a spatula.
  7. Bake for 50–60 minutes until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
