Ingredients:
- 2 cups (250g) all-purpose flour
- 2 tbsp (16g) baking powder
- 1/2 tsp (3g) salt
- 1 tsp (2g) ground cinnamon
- 2 large eggs
- 1 1/2 cups (350ml) buttermilk
- 1/2 cup (115g) unsalted butter, melted
- 1/2 cup (120ml) pure maple syrup
- 1 tsp (5ml) vanilla extract
Instructions:
- In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon until no clumps remain.
- In a separate large bowl, beat the eggs until frothy. Whisk in the buttermilk, melted butter, maple syrup, and vanilla extract until the mixture is a uniform, pale gold color.
- Pour the dry ingredients into the wet mixture. Gently whisk until just combined, leaving a few small lumps to prevent gluten development.
- Preheat the waffle iron and grease lightly with butter. Pour approximately 1/2 cup of batter into the center and cook until steam stops escaping from the iron.
- Immediately transfer the waffle to a wire cooling rack for 30 seconds before plating to maintain crispness.
