Ingredients:

  • 1 box (16 oz) angel food cake mix
  • 1 can (21 oz) lemon pie filling
  • 2 tbsp powdered sugar
  • 1 tsp fresh lemon zest

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a 9x13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large mixing bowl, combine the angel food cake mix and the canned lemon pie filling.
  3. Using a spatula, fold the ingredients together until the powder is fully absorbed and the batter is a uniform, pale yellow color; do not overmix.
  4. Pour the batter into the prepared pan and smooth the top with a spatula.
  5. Bake for 20-25 minutes, or until the edges pull slightly away from the pan and the center feels springy to the touch.
  6. Remove from the oven and let the bars cool completely in the pan to allow the structure to set.
  7. Dust with powdered sugar and fresh lemon zest before slicing into bars.
