Ingredients:
- 1 lb Italian pork sausage, casings removed
- 16 oz potato gnocchi
- 2 cups bell peppers, diced
- 1 cup red onion, coarsely chopped
- 3 tbsp extra virgin olive oil
- 1 tsp dried oregano
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1 cup marinara sauce
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tbsp fresh basil leaves, torn
Instructions:
- Preheat your oven to 400°F (200°C). In a large mixing bowl, combine the raw gnocchi, diced peppers, and chopped onions. Drizzle with olive oil and sprinkle in the oregano, salt, and pepper. Toss until evenly coated and spread across a large rimmed sheet pan or 9x13 inch baking dish.
- Nestle the Italian sausage in small, bite-sized chunks among the vegetables and gnocchi, ensuring the sausage is evenly distributed. Roast for 20 minutes until the gnocchi have browned edges and the sausage is fully cooked.
- Remove the pan from the oven. Dollop the marinara sauce over the mixture and swirl gently to coat. Top with shredded mozzarella and grated Parmesan.
- Return to the oven for 5–8 minutes, or until the cheese is bubbling and golden-brown. Garnish with fresh basil before serving.
