Ingredients:
- 1 lb ground pork
- 1 tsp kosher salt
- 1 tsp rubbed sage
- 1/2 tsp black pepper
- 1/4 tsp garlic powder
- 1/4 tsp crushed red pepper flakes
- 1/4 tsp ground cloves
- 1 large egg white
Instructions:
- In a large mixing bowl, combine the ground pork, salt, sage, pepper, garlic powder, red pepper flakes, and cloves. Add the egg white and mix until spices are evenly distributed, taking care not to overwork the meat.
- Divide the mixture into 6 equal portions. Roll each into a ball, then flatten into a disk about 1/2 inch thick. Use your thumb to create a slight indentation in the center of each patty to prevent puffing.
- Heat a cast iron skillet or non-stick pan over medium heat with a teaspoon of oil. Place patties in the pan and cook for 4–5 minutes per side until mahogany-colored and reaching an internal temperature of 160°F (71°C).
