Ingredients:
- 2 cups (250g) 00 flour or All-Purpose flour
- 3 large (150ml) eggs, room temperature
- ½ tsp (3g) fine sea salt
- 1 tbsp (15ml) extra virgin olive oil
- 1 cup (245g) pumpkin puree
- ½ cup (125g) whole milk ricotta cheese, drained
- ½ cup (50g) freshly grated Parmesan cheese
- 1 large (18g) egg yolk
- ¼ tsp (0.5g) ground nutmeg
- ½ tsp (3g) kosher salt
- ¼ tsp (1g) freshly cracked black pepper
Instructions:
- Mound flour on a clean surface and create a wide hole in the center.
- Crack eggs into the center, add salt and olive oil. Using a fork, gently whisk the eggs, gradually incorporating flour from the inner walls.
- Once a shaggy dough forms, knead by hand for 8-10 minutes until smooth and elastic.
- Wrap the dough tightly in plastic wrap and let it sit at room temperature for 30 minutes to relax the gluten.
- If ricotta is watery, strain through a fine-mesh sieve for 15 minutes.
- In a medium bowl, whisk together pumpkin puree, drained ricotta, Parmesan, egg yolk, nutmeg, salt, and pepper.
- Ensure the filling is thick and holds its shape; add extra Parmesan if too loose.
- Divide dough into 4 pieces and roll each into a translucent sheet about 1/8 inch thick.
- Spoon 1 tablespoon of filling about 2 inches apart on one half of the pasta sheet.
- Lightly brush the dough around the filling with water, then fold the other half of the sheet over the filling.
- Press firmly around the filling to push out air and seal the ravioli.
