Ingredients:
- 1 lb lean ground turkey
- 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) fire-roasted diced tomatoes
- 2 cups low-sodium chicken broth
- 1 can (4 oz) diced green chilis
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
Instructions:
- Heat the olive oil over medium heat. Add the ground turkey and cook, breaking it apart with your spoon, until no longer pink.
- Stir in the diced onion and cook until the onion becomes translucent and soft. Add the minced garlic and cook for 60 seconds until fragrant.
- Stir in the chili powder, cumin, and smoked paprika, coating the meat and onions in the spices for 1 minute to bloom the oils.
- Pour in the diced tomatoes, green chilis, and broth. Fold in the cubed sweet potatoes and kidney beans.
- Bring the mixture to a gentle boil, then reduce heat to low. Cover and simmer for 30–35 minutes until sweet potatoes are fork-tender and the sauce has thickened.
