Ingredients:

  • 2 cups (450g) Plain Greek Yogurt
  • 2 tbsp (42g) Honey
  • 1 tsp (5ml) Vanilla Extract
  • 1 cup (150g) Fresh Blueberries
  • 1 cup (150g) Sliced Strawberries
  • 1 tbsp (15g) Fresh Lemon Juice
  • 1 cup (100g) Low-Sugar Granola
  • 2 tbsp (15g) Sliced Almonds

Instructions:

  1. Whisk together the Greek yogurt, honey, and vanilla extract in a mixing bowl. Mix until the mixture is completely smooth and the honey is fully incorporated. Note: Over mixing can make some yogurts too thin, so just stop once it's smooth.
  2. Place the sliced strawberries and blueberries in a separate bowl. Toss with a squeeze of lemon juice until the fruit is lightly coated. Note: This acts as a barrier against the yogurt's moisture.
  3. Spoon a thick layer of the yogurt mixture into the bottom of each jar. Use a spoon to press it down until the surface is level.
  4. Add a generous layer of the lemon tossed berries on top of the yogurt. Spread them until they cover the yogurt surface.
  5. Repeat the layering process - yogurt, then fruit - until the jars are nearly full.
  6. Top the final yogurt layer with a crown of granola and sliced almonds. Press them lightly until they sit firmly on the yogurt.
  7. If you are prepping this for later, stop here and store the granola in a separate small container. Note: This is the only way to keep that shatter crisp texture.
  8. Chill for 10 minutes if you prefer a cold treat, or eat immediately.
