Ingredients:
- 3 large (350g) overripe bananas, mashed
- 1/2 cup (120g) plain Greek yogurt
- 1 large (50g) egg, room temperature
- 1/3 cup (80ml) pure maple syrup
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (180g) oat flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) cinnamon
- 1/4 tsp (1.5g) sea salt
Instructions:
- Preheat your oven to 350°F (175°C) and line a 9x5 inch loaf pan with parchment paper.
- In a large mixing bowl, mash the bananas until they form a smooth, lump-free paste.
- Whisk in the Greek yogurt, egg, maple syrup, and vanilla extract until the mixture is velvety and cohesive.
- Fold in the oat flour, baking soda, cinnamon, and salt. Mix only until the flour streaks disappear.
- Pour the batter into the prepared pan and bake for 55-65 minutes, or until a toothpick inserted into the center emerges clean.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
