Ingredients:

  • 3 large (350g) overripe bananas, mashed
  • 1/2 cup (120g) plain Greek yogurt
  • 1 large (50g) egg, room temperature
  • 1/3 cup (80ml) pure maple syrup
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (180g) oat flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) cinnamon
  • 1/4 tsp (1.5g) sea salt

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a 9x5 inch loaf pan with parchment paper.
  2. In a large mixing bowl, mash the bananas until they form a smooth, lump-free paste.
  3. Whisk in the Greek yogurt, egg, maple syrup, and vanilla extract until the mixture is velvety and cohesive.
  4. Fold in the oat flour, baking soda, cinnamon, and salt. Mix only until the flour streaks disappear.
  5. Pour the batter into the prepared pan and bake for 55-65 minutes, or until a toothpick inserted into the center emerges clean.
  6. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
