Ingredients:

  • 4 English muffins, split
  • 4 slices sharp cheddar cheese
  • 2 tbsp unsalted butter, softened
  • 4 slices Canadian bacon
  • 4 large eggs
  • 1 tbsp neutral oil
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper

Instructions:

  1. Heat the neutral oil in a 10-inch non-stick skillet over medium-high heat. Add the Canadian bacon, searing for 2–3 minutes per side until the edges are mahogany-colored and slightly crisp. Remove and set aside.
  2. Reduce heat to medium. Crack eggs into the skillet. Once the whites are set but the yolk is still glossy, fold the edges of the egg inward to create a circular patty. Season with salt and pepper, cook for 1 minute more, and remove.
  3. Butter the cut sides of the English muffins and toast in the skillet or oven until golden brown.
  4. Assemble the sandwiches in this specific order: Bottom Muffin, Cheese Slice, Protein, Egg, and Top Muffin.
