Ingredients:
- 4 English muffins, split
- 4 slices sharp cheddar cheese
- 2 tbsp unsalted butter, softened
- 4 slices Canadian bacon
- 4 large eggs
- 1 tbsp neutral oil
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
Instructions:
- Heat the neutral oil in a 10-inch non-stick skillet over medium-high heat. Add the Canadian bacon, searing for 2–3 minutes per side until the edges are mahogany-colored and slightly crisp. Remove and set aside.
- Reduce heat to medium. Crack eggs into the skillet. Once the whites are set but the yolk is still glossy, fold the edges of the egg inward to create a circular patty. Season with salt and pepper, cook for 1 minute more, and remove.
- Butter the cut sides of the English muffins and toast in the skillet or oven until golden brown.
- Assemble the sandwiches in this specific order: Bottom Muffin, Cheese Slice, Protein, Egg, and Top Muffin.
