Ingredients:

  • 1 cup (100g) unsweetened cocoa powder
  • 2 cups (400g) granulated white sugar
  • 0.5 cup (120ml) vegetable oil
  • 4 large eggs
  • 2 tsp pure vanilla extract
  • 2 cups (250g) all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp fine sea salt
  • 0.5 cup (100g) granulated white sugar for coating
  • 1 cup (120g) powdered sugar

Instructions:

  1. In a large bowl, whisk together the cocoa powder, 2 cups of granulated sugar, and vegetable oil. Add the eggs one at a time, whisking vigorously after each addition until the batter is glossy. Stir in the vanilla extract.
  2. Sift the flour, baking powder, and salt directly into the wet ingredients. Use a spatula to fold the mixture until no white streaks remain and a soft, sticky dough forms.
  3. Cover the bowl tightly with plastic wrap and refrigerate for at least 3 hours or overnight to hydrate the flour and firm the dough.
  4. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper. Scoop rounded tablespoons of chilled dough and roll into balls.
  5. Roll each ball first in the bowl of granulated sugar, then immediately in the powdered sugar until heavily coated. Place on baking sheets and bake for 10 minutes until cracked and set.
