Ingredients:

  • 1.25 cups all-purpose flour
  • 0.5 cup unsalted butter, chilled and cubed
  • 0.25 tsp salt
  • 4 tbsp ice water
  • 2 cups cooked, mashed sweet potatoes, peeled
  • 1 can (14 oz) sweetened condensed milk
  • 0.5 cup packed light brown sugar
  • 2 tbsp unsalted butter, melted
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.5 tsp salt

Instructions:

  1. Pulse flour, salt, and chilled butter in a food processor until the mixture resembles coarse crumbs.
  2. Slowly add ice water, one tablespoon at a time, until the dough just holds together.
  3. Wrap the dough in plastic and refrigerate for 30 minutes.
  4. Roll out the chilled dough on a floured surface and press it into a 9-inch deep-dish pie plate.
  5. Preheat the oven to 350°F (175°C).
  6. Place the cooked sweet potatoes in a food processor and process until completely smooth.
  7. Add the sweetened condensed milk, brown sugar, melted butter, and vanilla extract; blend again until the mixture is glossy and uniform.
  8. Add eggs one at a time, followed by the cinnamon, nutmeg, and salt, pulsing briefly to incorporate without overmixing.
