Ingredients:

  • 3 large overripe bananas, mashed (approx. 350g)
  • 1/2 cup (115g) unsalted butter, melted and cooled slightly
  • 1/2 cup (120g) plain Greek yogurt
  • 3/4 cup (150g) brown sugar, packed
  • 1 large egg, room temperature
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1 tsp (2g) ground cinnamon
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease your 9x5 inch loaf pan and line it with parchment paper.
  2. In a large bowl, mash the overripe bananas until they form a smooth, thick paste with minimal lumps.
  3. Whisk in the melted butter, brown sugar, Greek yogurt, egg, and vanilla extract until the mixture is glossy and emulsified.
  4. Sift in the flour, baking soda, salt, and cinnamon. Fold gently with a spatula until no more streaks of flour are visible; do not over-mix.
  5. Fold in 3/4 cup of the semi-sweet chocolate chips.
  6. Pour the batter into the prepared pan and sprinkle the remaining chocolate chips on top.
  7. Bake for 55-65 minutes until the crust is deep mahogany-brown and a toothpick inserted in the center comes out with a few light crumbs.
  8. Let the loaf rest in the pan for 10 minutes before transferring to a wire rack to cool completely.
