  • 1/2 cup heavy cream (120ml)

  • 1/2 tsp black pepper (2g)
  • 1/4 tsp garlic powder (1g)
  • 8 oz sharp cheddar cheese, shredded (225g)
  • 8 oz cooked bacon bits or browned breakfast sausage (225g)
  • 1 cup diced bell peppers (150g)
  • 2 green onions, thinly sliced (30g)
  • 1 tbsp unsalted butter, melted (15g)

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish with melted butter, ensuring corners are well-coated.
  2. Sauté diced bell peppers in a pan for 3-4 minutes until slightly softened to remove excess moisture.
  3. In a large bowl, whisk together the eggs, heavy cream, salt, pepper, and garlic powder until combined, avoiding excessive air bubbles.
  4. Using a spatula, fold in the shredded cheddar cheese, cooked meats, sautéed bell peppers, and sliced green onions.
  5. Pour the mixture into the prepared baking dish and smooth the top with a spatula.
  6. Bake for 25-30 minutes until the edges are golden-brown and the center has a slight jelly-like wobble.
  7. Allow the casserole to rest for 5-10 minutes before slicing and serving.
