Ingredients:
- 1 1/4 cups (150g) all-purpose flour
- 1/2 tsp (3g) salt
- 1/2 cup (113g) unsalted butter, chilled and cubed
- 4 tbsp (60ml) ice water
- 2 lbs (900g) sweet potatoes
- 1/2 cup (100g) dark brown sugar, packed
- 1/2 cup (120ml) evaporated milk
- 2 large eggs
- 3 tbsp (42g) unsalted butter, melted
- 1 tsp (5g) ground cinnamon
- 1/2 tsp (2g) ground nutmeg
- 1/4 tsp (1g) ground ginger
- 1/4 tsp (1g) salt
- 1 tsp (5ml) vanilla extract
Instructions:
- Preheat oven to 400°F (200°C).
- Prick the sweet potatoes several times with a fork and place them on a baking sheet.
- Roast for 45-60 minutes until soft when pierced with a knife, then allow to cool slightly, peel skins, and mash until smooth.
- Pulse flour and salt in a food processor; add chilled butter and pulse until the mixture resembles coarse crumbs.
- Slowly add ice water, one tablespoon at a time, until the dough just holds together.
- Press the dough into a 9-inch pie dish, trim the edges, and chill in the fridge for 30 minutes.
- Place the roasted sweet potato puree in a mixing bowl and beat in dark brown sugar and melted butter until combined.
- Whisk in eggs one at a time, followed by evaporated milk and vanilla extract.
- Sift in cinnamon, nutmeg, ginger, and salt, mixing until the batter is velvety.
- Pour the filling into the chilled crust and smooth the top with a spatula.
- Bake at 350°F (175°C) for 45-55 minutes until the edges are set but the center has a slight jiggle.
- Cool completely for at least 2 hours before slicing.
