Ingredients:
- 6 large eggs
- 1/4 cup whole milk
- 1/2 tsp salt
- 1/4 tsp cracked black pepper
- 8 oz ground breakfast sausage
- 1/2 cup diced white onion
- 1/2 cup diced red bell pepper
- 1 tbsp unsalted butter
- 4 large (10-inch) flour tortillas
- 1 cup shredded sharp cheddar cheese
Instructions:
- Place a skillet over medium heat. Add the ground breakfast sausage, breaking it apart with a spatula until browned. Stir in the diced white onion and red bell pepper, cooking until onions are translucent and peppers have softened. Remove the mixture from the pan and set aside.
- In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until combined. Melt the butter in the same skillet over medium-low heat, pour in the egg mixture, and gently push the eggs from the edges toward the center with a silicone spatula until they are soft and slightly wet.
- Fold the cooked sausage and vegetable mixture back into the scrambled eggs and remove from heat.
- Warm each flour tortilla in the microwave for 10 seconds to make them pliable. Place a portion of shredded cheddar cheese in the center, followed by a scoop of the egg and sausage mixture.
- Fold the left and right sides of the tortilla inward, then roll tightly from the bottom up. Place the burrito seam-side down in a hot skillet for 60 seconds until golden and sealed.
