Ingredients:
- 1 package (5.3 oz / 150g) Boursin Garlic & Fine Herbs cheese
- 2 cups (300g) cherry tomatoes
- 3 tbsp (45ml) extra virgin olive oil
- 3 cloves (15g) garlic, smashed
- ½ tsp (2g) red pepper flakes
- ½ tsp (3g) salt
- ¼ tsp (1g) black pepper
- 1 lb (450g) rigatoni or penne pasta
- 2 cups (60g) fresh baby spinach
- 1 cup (240ml) reserved pasta cooking water
- 2 tbsp (8g) fresh basil, torn
Instructions:
- Preheat your oven to 400°F (200°C).
- Place the Boursin cheese block directly in the center of a 9x13-inch baking dish.
- Scatter the cherry tomatoes and smashed garlic cloves around the cheese.
- Drizzle the olive oil over the ingredients and sprinkle with red pepper flakes, salt, and pepper.
- Roast for 20–25 minutes, or until the tomatoes have burst and developed charred edges.
- While the cheese and tomatoes roast, bring a large pot of salted water to a boil and cook the pasta according to package directions, pulling it out 1 minute before 'al dente'.
- Reserve at least 1 cup of the starchy pasta water before draining the pasta.
- Remove the baking dish from the oven and immediately add fresh baby spinach to the hot tomatoes to wilt.
- Smash the roasted tomatoes and stir them into the melted Boursin cheese.
- Slowly stir in the reserved pasta water, whisking until the sauce becomes a velvety, cohesive cream.
- Toss in the cooked pasta and fresh basil, stirring until the pasta is thoroughly coated in the sauce.
