Ingredients:

  • 12 Medjool dates, pitted (approx. 10 oz / 280g)
  • 4 oz (113g) Boursin Garlic & Fine Herbs cheese, softened
  • 6 slices (approx. 6 oz / 170g) thin-cut bacon, sliced in half lengthwise
  • 2 tbsp (30ml) hot honey
  • 2 tbsp (15g) roasted pistachios, crushed

Instructions:

  1. Slice a long slit down the side of each Medjool date and remove the pit if not pre-pitted.
  2. Using a small spoon or a piping bag, fill the center of each date with about 1 teaspoon (5g) of softened Boursin cheese and gently pinch the date closed.
  3. Place one half-strip of bacon across the date and wrap it tightly around the date, overlapping the ends slightly.
  4. Place the wrapped dates seam-side down on a parchment-lined baking sheet.
  5. Bake at 400°F (200°C) for 15–20 minutes until the bacon is mahogany-colored and dates are glistening.
  6. Remove from oven and let rest for 5 minutes to allow the cheese to set.
  7. Optional: Drizzle with hot honey and sprinkle with crushed pistachios immediately before serving.
