Ingredients:

  • 4 (6 oz) cod fillets, patted dry
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 5.3 oz Boursin Garlic & Fine Herbs cheese, softened
  • 2 tbsp panko breadcrumbs
  • 1 tbsp fresh parsley, chopped
  • ½ lemon, juiced

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. Pat the cod fillets completely dry with paper towels. Rub each fillet with olive oil, then season both sides evenly with salt and pepper. Place them on the prepared baking sheet.
  3. Using a spatula, spread a generous layer of softened Boursin cheese evenly over each fillet to the edges. Lightly sprinkle panko breadcrumbs over the cheese if using.
  4. Bake for 12–15 minutes until the fish is opaque and flakes easily, or an internal thermometer reads 145°F (63°C). Optionally, broil on high for 1–2 minutes for a golden crust.
  5. Remove from the oven, immediately drizzle with fresh lemon juice, and garnish with chopped parsley.
