Ingredients:
- 1 slice (40g) sourdough bread
- 1 tsp (5ml) olive oil
- 1 ripe medium avocado (150g)
- 1 tsp (5ml) lemon juice
- 1/4 tsp (1.5g) salt
- 1/8 tsp (0.5g) black pepper
- 1 small clove (3g) garlic, peeled
- 1 large egg (50g)
- 1 tsp (5ml) olive oil
- 1 pinch red pepper flakes
Instructions:
- Toast the sourdough slice until the edges are deep mahogany-brown and the center is firm. Rub the peeled garlic clove across the surface of the hot toast to infuse the crust.
- In a small bowl, combine the scooped avocado, lemon juice, salt, and black pepper. Mash with a fork until mostly smooth but with a few small chunks remaining.
- Heat 1 tsp of olive oil in a small non-stick pan over medium heat. Crack the egg into the pan and cook for approximately 3 minutes until the whites are set but the yolk remains liquid.
- Spread the avocado mash generously across the toast from edge to edge. Carefully slide the cooked egg on top.
- Finish the dish with a sprinkle of red pepper flakes and an extra pinch of salt.
