Ingredients:

  • 1 slice (40g) sourdough bread
  • 1 tsp (5ml) olive oil
  • 1 ripe medium avocado (150g)
  • 1 tsp (5ml) lemon juice
  • 1/4 tsp (1.5g) salt
  • 1/8 tsp (0.5g) black pepper
  • 1 small clove (3g) garlic, peeled
  • 1 large egg (50g)
  • 1 tsp (5ml) olive oil
  • 1 pinch red pepper flakes

Instructions:

  1. Toast the sourdough slice until the edges are deep mahogany-brown and the center is firm. Rub the peeled garlic clove across the surface of the hot toast to infuse the crust.
  2. In a small bowl, combine the scooped avocado, lemon juice, salt, and black pepper. Mash with a fork until mostly smooth but with a few small chunks remaining.
  3. Heat 1 tsp of olive oil in a small non-stick pan over medium heat. Crack the egg into the pan and cook for approximately 3 minutes until the whites are set but the yolk remains liquid.
  4. Spread the avocado mash generously across the toast from edge to edge. Carefully slide the cooked egg on top.
  5. Finish the dish with a sprinkle of red pepper flakes and an extra pinch of salt.
