Ingredients:

  • 3 large overripe bananas (approx. 375g), mashed
  • 15.25 oz spice cake mix (432g)
  • 2 large eggs (approx. 100g), room temperature
  • 1 cup semi-sweet chocolate chips (170g)

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a standard 9x5 inch loaf pan.
  2. In a large mixing bowl, mash the bananas until nearly liquid with no large chunks remaining. Whisk in the two eggs until the mixture is a singular, pale-yellow liquid.
  3. Gently fold in the spice cake mix using a spatula. Incorporate until dry streaks just disappear; do not over-mix. Fold in 3/4 cup of the chocolate chips.
  4. Pour the batter into the prepared loaf pan. Sprinkle the remaining 1/4 cup of chocolate chips over the top.
  5. Bake for 45–50 minutes. The loaf is done when the center feels firm and a skewer inserted into the middle comes out with moist crumbs but no raw batter.
