Ingredients:

  • 2 lbs sweet potatoes, roasted and peeled
  • 1 can (14 oz) sweetened condensed milk
  • 1 pre-made deep dish pie crust (14 oz)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Prick the sweet potatoes several times with a fork and wrap them tightly in aluminum foil.
  3. Place on a baking sheet and roast for 45–60 minutes until a knife slides into the center with zero resistance.
  4. Allow the potatoes to cool slightly, then slice the skins off and scoop out the vibrant orange flesh.
  5. Place the roasted sweet potato flesh into a food processor or mixing bowl and puree until completely smooth.
  6. Stream in the sweetened condensed milk while mixing on low, blending until the mixture is a uniform, glossy mahogany color.
  7. Press the pre-made crust firmly into a 9-inch pie plate.
  8. Pour the filling into the crust, smoothing the top with a spatula.
  9. Bake at 350°F (175°C) for 35–45 minutes.
