Ingredients:
- 2 lbs sweet potatoes, roasted and peeled
- 1 can (14 oz) sweetened condensed milk
- 1 pre-made deep dish pie crust (14 oz)
Instructions:
- Preheat your oven to 400°F (200°C).
- Prick the sweet potatoes several times with a fork and wrap them tightly in aluminum foil.
- Place on a baking sheet and roast for 45–60 minutes until a knife slides into the center with zero resistance.
- Allow the potatoes to cool slightly, then slice the skins off and scoop out the vibrant orange flesh.
- Place the roasted sweet potato flesh into a food processor or mixing bowl and puree until completely smooth.
- Stream in the sweetened condensed milk while mixing on low, blending until the mixture is a uniform, glossy mahogany color.
- Press the pre-made crust firmly into a 9-inch pie plate.
- Pour the filling into the crust, smoothing the top with a spatula.
- Bake at 350°F (175°C) for 35–45 minutes.
