Ingredients:
- 1 lb ground turkey
- 1 tbsp olive oil
- 1 medium yellow onion, diced
- 1 medium red bell pepper, diced
- 3 cloves garlic, minced
- 15 oz pure pumpkin puree
- 1 can (14.5 oz) diced tomatoes, undrained
- 2 tbsp tomato paste
- 1 cup beef broth
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup frozen corn
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/4 tsp ground cinnamon
- salt to taste
- black pepper to taste
Instructions:
- Heat the olive oil in a large pot or Dutch oven over medium-high heat.
- Add the ground turkey and cook until browned and no longer pink, approximately 5-7 minutes.
- Stir in the diced onion and red bell pepper, sautéing until the onion becomes translucent and the pepper softens.
- Add the minced garlic and cook for 60 seconds until fragrant.
- Stir in the tomato paste and pumpkin puree. Cook the mixture for 3 minutes, stirring constantly, until the color darkens and the mixture thickens.
- Stir in the chili powder, cumin, smoked paprika, and cinnamon until well combined.
- Add the undrained diced tomatoes, beef broth, drained black beans, and frozen corn.
- Simmer the chili until heated through and flavors are well blended.
