Ingredients:

  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 1 medium red bell pepper, diced
  • 3 cloves garlic, minced
  • 15 oz pure pumpkin puree
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/4 tsp ground cinnamon
  • salt to taste
  • black pepper to taste

Instructions:

  1. Heat the olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add the ground turkey and cook until browned and no longer pink, approximately 5-7 minutes.
  3. Stir in the diced onion and red bell pepper, sautéing until the onion becomes translucent and the pepper softens.
  4. Add the minced garlic and cook for 60 seconds until fragrant.
  5. Stir in the tomato paste and pumpkin puree. Cook the mixture for 3 minutes, stirring constantly, until the color darkens and the mixture thickens.
  6. Stir in the chili powder, cumin, smoked paprika, and cinnamon until well combined.
  7. Add the undrained diced tomatoes, beef broth, drained black beans, and frozen corn.
  8. Simmer the chili until heated through and flavors are well blended.
