- 2 cups all-purpose flour
- 1 cup shredded coconut
- 1 cup coconut milk
- ½ cup granulated sugar
- ¼ cup coconut oil (or melted butter)
- 2 eggs
- 1 ½ tsp baking powder
- ½ tsp salt
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- Mix dry ingredients: In a bowl, whisk together flour, baking powder, salt, and shredded coconut.
- Prepare wet ingredients: In another bowl, beat eggs, sugar, coconut milk, coconut oil, and vanilla extract.
- Combine the mixtures: Gradually mix the dry ingredients into the wet mixture. Stir gently until combined.
- Pour into pan: Transfer the batter into the greased loaf pan.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool & Serve: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack before slicing.
Notes
- For extra flavor, add ½ tsp cinnamon or nutmeg.
- Substitute coconut sugar or honey for a refined sugar-free option.
- Store at room temperature for 3 days, in the fridge for 1 week, or freeze for up to 3 months.
